Description
Botanically known as Apium Graveolens, celery seeds are the herbaceous plant of the parsley family, Apiaceae. Celery is an umbelliferous, aromatic, herbaceous plant grown for its leaves, seeds, oleoresin and essential oil. The rigid fruit is small, ovoid, 1 to 1.5mm long, 1 to 2mm in diameter, and contains a tiny brown seed.
Celery seeds are procured from the flowers of celery plants. The seeds have an intense, warm astringent flavour. India is one of the largest celery producers.
Celery is a winter crop. Out of the total cultivation of Indian celery seeds, majority of its produce is exported to the USA, followed by the Netherlands, South Africa, and Australia. The celery seeds used for exports commercially are extracted from the flower. They are generally used as a perfect seasoning to enhance the taste of dishes like fish, chicken, potatoes, tomato, carrot, eggs, etc.
